Here we go again with another mealtime monday! This time I am sharing a fantastic meal; pork stuffed bell peppers. Covered with oozy cheese and a delicious spicy tomato sauce, this was definitely a winner. Next time I make this I might try to get some of the sauce and and cheese throughout the pepper to spread the best part throughout.
Ingredients:
2 Green Bell Peppers
2 Tablespoons Olive Oil
1/2 Yellow Onion, Diced
1 Clove Garlic Minced
1/2 Pound Lean Ground Pork
1/2 Cup Cooked Brown Rice
1/2 Cup Diced Tomatoes, Drained
1 Teaspoon Dried Oregano
Mozzarella Cheese, Grated
1/4 Cup Ketchup
1/2 Teaspoon Worcestershire Sauce
Hot Sauce to taste
Salt & Pepper
Directions:
1. Wash your bell peppers and cut the tops off. Remove the seeds. Place the peppers top up into a large pot of boiling water. Make sure they are fully emerged, using a spoon to hold them under the water is they try to float. Boil for about 3 minutes.
2. Remove the peppers from the water and set upside down on a paper towel to cool.
3. In a large skillet over medium heat, add olive oil and onions and sauté for about 5 minutes so the onions soften and turn translucent. Add minced garlic and sauté for an additional minute.
4. Remove skillet from heat. Add raw pork, cooked brown rice, diced tomatoes & oregano. Season with salt and pepper.
5. Mix ingredients together in the skillet to thoroughly combine.
6. Preheat oven to 350 degrees. Place bell peppers in a glass baking dish. Drizzle inside of peppers with olive oil. Take your meat mixture and stuff the inside of each pepper.
7. Mix together ketchup, Worcestershire and hot sauce. I like using Pepper Plant garlic hot sauce.
8. Add 1/4 cup of water the the baking dish. Dollop a generous amount of sauce on top of each pepper. Place in the oven and bake for 40-50 minutes or until the internal temperature reaches 170 degrees.
9. Top with mozzarella and bake for a couple more minutes to melt the cheese. Serve & enjoy!
